how important is it to obey the "motor limits" on escs?

im thinking of getting an esc with a 12t limit just becuase its cheap. i am using it for drag racing, so itll run for about 3 seconds full blast at a time. what happens if i use a 10t motor instead for those couple seconds?

now say it has a 10 cell limit, and i want to run 12 cells? its only for a while, how important is it?

can anyone help me, like recommend something?
