Break-in on a nitro engine is usually four to six tanks, not a full gallon. If you cannot hit full throttle, you've been running the vehicle, not breaking it in. Break-in is a procedure that slowly brings a vehicle to a normal operation state by leaning out the fuel as the engine gets looser. Tight manufacturing tolerances require more fuel (and lubrication) to be pushed through because the engine is not only moving the vehicle but it is also overcoming internal friction of the bearing surfaces.
Read the manual for the engine because it will outline how you were supposed to be turning adjustment screws on the carburator. Also, pull off the air filter and verify that when you use the transmitter to go full throttle that you get a round bore through the venturi and when you close it you get an eclipse of a circle.
Good luck!
